We are a cosmopolitan signature restaurant offering creative contemporary cuisine that is evolving at an introspective pace due to the impact of the pandemic and its consequences on gastronomy in Peru. We are developing a cuisine that looks inward to think about the future.

A turning point to reflect on where we are going and where we come from. Creating a signature restaurant to the chef's taste with the intention of revaluing Peruvian products through creative cuisine linked to the R&D Atelier, which will aim to create a symbiosis between gastronomy and everything it encompasses, such as nature, tradition, product biodiversity, cultural fusion, and the creativity of assimilating the art of good eating and gastronomy.

The proposal revolves around rediscovering the flavors of Peruvian cuisine, both à la carte and in the tasting menu, which we call experiences, with contemporary Peruvian cuisine that fuses not only international and national cooking techniques, but also the chef's memories to create fresh, healthy, and balanced dishes.

In short, it is modern, fun, signature Peruvian cuisine that seeks to exploit the sense of taste and our sixth sense, “creativity.”

A disciple of the great chef Eric Canino (two Michelin stars in France), where he learned the nature of living through cooking, today he expresses himself in his own kitchen called XOMA, faithful to the philosophy of “slow food” together with traditional Peruvian cuisine, creating a much healthier and more sustainable creative cuisine, that is, a signature Peruvian cuisine based on purely Peruvian products.

He represented Peru in the San Pellegrino Young Chef competition in 2022. The creativity of a young mind can revolutionize the concept of a cuisine that never stops evolving, always looking inward because our reason for being is your happiness.
